Mara Preserve, I Contadini (130gr): Over one third “hot” chili peppers, complemented with bell peppers and tomatoes, onions added for extra tastiness; slow-cooked until it is dense and creamy, this traditional sauce is left to further thicken in the sun for days prior to being blended and placed in jars with extra virgin olive oil.
Ingredients: Chili peppers, bell peppers, extra virgin olive oil, dried tomatoes, onions, whole sea salt, apple vinegar and lemon juice.
TOASTED-FLOUR ORECCHIETTE TORRE BRANCIA
Toasted-Flour Orecchiette Torre Brancia, Azienda Agricola San Matteo (500gr): A unique ingredient steeped in the history of Gargano, this darker-colored pasta is made from toasted wheat flour.. Ironically, an ingredient born of poverty is now sought-after in the finest restaurants and kitchens, thanks to its nutty, smoky aromas. Artisanal grano arso pasta has a rough, porous texture that absorbs and enhances any sauce, and distinctive depth and richness of flavor. There is no torching or gleaning involved in arso flour today: the husked grains are simply toasted in a process rather like the roasting of coffee beans.
Ingredients: Durum wheat semolina, toasted-wheat flour and water.
Turnip-Green Pesto, I Contadini (2 jars, 230gr each): The Salento spin on the traditional sauce sees local turnip greens cleansed and rinsed by hand, seared, then finely ground and blended with extra virgin olive oil, achieving the ideal texture to go with the rough, porous surface of grano arso pasta.
Ingredients: Turnip greens, extra virgin olive oil, chili pepper, garlic, apple vinegar, whole sea salt and lemon juice.
EXTRA VIRGIN OLIVE OIL
Extra Virgin Olive Oil, Antico Frantoio Muraglia (250ml): Pure, native Peranzana olive varietal, characterized by very low acidity and delicate, well-balanced flavor. Fresh and fragrant, the nose recalls fruity tomatoes, radish and arugula with bright nuances of artichoke and a liveliness confirmed on the palate, which is both refreshing and mellow, neither too bitter nor excessively spicy.

Nero di Troia Puglia IGP, Valentina Passalacqua (750ml): This sturdy, food-friendly red hails from the heart of Gargano National Park and hand-picked native grapes. Brilliant ruby with violet reflections, intense bouquet of ripe plums and spice confirmed on a fruity, round, full-bodied palate.
