    Set off on a fantastic journey into the flavours of Sicily with a plate of organic, artisanal pasta, made in the so-called “city between two seas” – Trapani. The company Segreti di Sicily is behind the bronze-die Busiate pasta. This is a specialty that can take on the flavours and aromas of the caper and anchovy sauce from one of the oldest caper businesses, La Nicchia, on Pantelleria. This is the only farm, caper processing plant and specialty food laboratory still operating in the region. Elevate these flavours to perfection with a few drops of extra-virgin olive oil and fleur de sal from the family-run business Ravidà. This dish calls out for a bottle of wine to accompany it, such as Agricola Graci’s elegant Etna Rosso from the heart of the Alcantara

    LA NICCHIA PANTELLERIA – CAPERS AND ANCOVIES SAUCE
    From the experience of “La Nicchia” farm, keeper of the ancient recipes of Pantelleria tradition, rises the capers sauce: a tasty product, with an intense aftertaste thanks to the addition of chili. A perfect seasoning for a tasty and tantalizing bowl of Busiate. A versatile seasoning that can give to the palate different and attractive tastes.

    AZIENDA AGRICOLA RAVIDA’ – EXTRA VIRGIN OLIVE OIL
    This oil, an award winning house blend recognized as “one of the best olive oils in the world”, is an elegant, perfectly balanced oil with aromas of medium ripe tomato, freshly mown hay and lemon blossom. Its distinct peppery aftertaste is delicate and contrasts with light bitter flavor. An oil with great personality that goes perfectly with every kind of food.

    AZIENDA AGRICOLA RAVIDA’ – FIORE DI SALE
    RAVIDA Fleur de Sel is produced on the salt pans along the western coast of Sicily, enchanting lagoons populated by flamingoes in an area blown by dry African winds. In this area protected by the WWF, sea salt is produced following ancient traditions by drying sea water in evaporation ponds. As the sea water dries under the sun and wind sea salt emerges.
    The very first pick, the salt that emerges on the top is our Fiore di Sale – Fleur de Sel – the lightest flakes of salt in the pan, very rich in magnesium, potassium and other minerals. You will find it to very soluble without bitter aftertaste. You will appreciate its perfect match with Ravida olive oils.

    SEGRETI DI SICILIA – LE BUSIATE
    A symbol of the tasty Sicilian culinary tradition, Trapani’s busiate are a typical kind of pasta of this particular province. This, in particular, are drawned with bronze, dried at law temperatures with an ancient organic variety of grains called Tumminia. Thanks to its spiral shape it can hold a high-quantity of seasoning and the go perfectly with a capers sauce or sun-dried tomatoes.

    AZIENDA AGRICOLA GRACI – ETNA ROSSO
    A red-ruby wine. Colore rosso rubino brillante. It has floral and red fruits scents with some herbes notes. In the mouth it is harmonious and balanced, with fruity and delicates flavors with some mineral scents.
    Graci’s Etna Rosso DOC is characterized by its freshness that goes well with tasty starters.
